Thanksgiving

Did everyone survive the feast-fest? Or are we still feasting? hehe. My contribution to this thanksgiving was the following: Mac & Cheese, Green Bean Casserole, Chicken & Mushroom Noodle Casserole, and assorted cookies for dessert. I helped my Mom cook some of the other sides. It was delicious.



I was most excited about the Mac & Cheese. Mmmm. SO GOOD. Below is the recipe I used from kraftfoods.com. For the party, I doubled the recipe. It was more than enough for everyone to have a large serving. teehee.

1 can (5 oz.) evaporated milk
2 eggs, lightly beaten
2 tbsp. butter or margarine, melted
1/4 to 1/2 tsp. ground red pepper
1/2 lb. (8 oz.) Velveeta, cut up
1 cup shredded cheddar cheese
2 cups (8 oz.) elbow macaroni, cooked, drained

PREHEAT oven to 350 degrees. Mix milk and eggs in large bowl. Add butter, red pepper, Velveeta, and cheddar cheese. Stir in macaroni; mix lightly.
POUR into 1-1/2 quart casserole dish.
BAKE 20 minutes or until heated through.

About 15 minutes into baking, I like to take it out and stir it. I find that it helps get the cheesy goodness into all the nooks and crannies of the macaroni. hehe.
